Small Batch Buffalo Chicken Dip for Two
This small batch buffalo chicken dip is creamy, cheesy and tangy, with all the buffalo flavor you want and none of the party-size pan you don’t.
It makes enough for two people with a little left over, or a small group sharing it as an appetizer.
Most buffalo chicken dip recipes are designed for a party. That’s great when you’re actually hosting one. It’s less great when you just want buffalo chicken dip on a random afternoon and suddenly have enough in your refrigerator to eat it for the next week.
So this version starts small on purpose: 4 ounces of cream cheese and 1 to 1½ cups of shredded chicken. You still get a generous dish of dip. You just don’t get a project out of it.
It’s also one of the easiest ways to use shredded chicken you already have on hand. I made mine with part of a batch I’d prepped for the week, and it came together in about five minutes before it went in the oven.

A container of shredded chicken can start to feel like homework by Thursday. This is the easiest way I know to make it feel like a treat again.
It’s a fast and easy way to satisfy appetizer cravings
Everything goes into one bowl, gets stirred together and heads into a small baking dish or glass mixing bowl. The oven does the rest while you find the chips, or use the microwave if you want it even faster.
Ingredients for Small Batch Buffalo Chicken Dip
Cooked shredded chicken
Any cooked, shredded chicken works, from leftovers to rotisserie. I used a batch of my Instant Pot shredded chicken, which takes minutes in an Instant Pot Duo, and my crockpot shredded chicken is the hands-off version if you’d rather set it and walk away.
Cream cheese
Four ounces, or half a standard block, softened so it mixes in smoothly. This is what gives the dip its thick, creamy base.
Buffalo sauce
Start with ¼ cup and add more to taste. I use Frank’s RedHot Buffalo Wings Sauce, which is already balanced for buffalo flavor, so there’s no butter to melt in.
Ranch dressing
A ¼ cup of ranch adds tang and keeps the dip soft and scoopable. Use your favorite bottled ranch or blue cheese if that’s your preference.
Shredded cheddar cheese
Half a cup of Tillamook sharp cheddar melts into the dip and gives it that cheesy pull. Freshly shredded melts smoother than the bagged kind, but either works.
How to Make Small Batch Buffalo Chicken Dip
Step 1: Combine everything
Add the shredded chicken, softened cream cheese, ¼ cup buffalo sauce, ranch and shredded cheddar and shredded cheddar to a small glass mixing bowl. Stir until everything is evenly combined.. Stir until everything is evenly combined.
Step 2: Bake until hot and creamy
For the best results, transfer the mixture to a small baking dish and bake at 375°F for 15–20 minutes, or until hot and creamy throughout. Baking takes a little longer, but the dip stays warm much longer while you’re eating it. A pair of mini oval au gratin dishes works well here if you want one dish each.
Step 3: Or microwave if you’re short on time
If you’re short on time, you can microwave the dip right in the same glass bowl. Heat it in short intervals, stirring between each one, until hot. The microwave version cools down fairly quickly, though, so I prefer the oven when I have the extra few minutes.
Step 4: Taste and adjust the heat
Taste and add more buffalo sauce as desired. Start with ¼ cup for a creamy, milder version or increase it toward ½ cup for more buffalo flavor and heat.
Step 5: Serve warm
Serve with tortilla chips, crackers, celery, carrots or your favorite dippers.
Tips For the Perfect Small Batch Buffalo Chicken Dip
- Soften the cream cheese first. Cold cream cheese leaves lumps. Thirty minutes on the counter, or 15 seconds in the microwave, fixes that.
- Add sauce a tablespoon or two at a time. You can always add more buffalo sauce, but you can’t take it back out.
- Shred the chicken finely. Smaller shreds coat more evenly and make the dip easier to scoop.
- Use a small, shallow dish. A smaller dish keeps the dip from drying out at the edges. Splitting it between two mini dishes heats it faster and keeps each portion warm.
- Top with extra cheese for the last five minutes. It’s optional, but a little extra cheddar on top gives you a melty finish.
Storage + Freezing
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. If you mixed it in a glass bowl with a lid, just pop the lid on and refrigerate the leftovers in the same bowl.
Reheat in the microwave in short intervals, stirring in between, or in a 350°F oven until warmed through.
You can also make it ahead. Mix everything together, cover and refrigerate it until you’re ready to bake, then add a few extra minutes to the bake time.
I don’t recommend freezing it. Dairy-heavy dips tend to turn grainy after thawing, and the whole point of this recipe is making a reasonable amount in the first place.

How spicy is small batch buffalo chicken dip?
With ¼ cup buffalo sauce, it has buffalo flavor without much heat. The cream cheese, ranch and cheddar mellow the sauce considerably. At ½ cup, the buffalo flavor is much more pronounced. I prefer mine closer to ½ cup.
Can I use rotisserie chicken?
Yes. Rotisserie, leftover or freshly cooked chicken all work. If you want to make it from scratch, my Instant Pot shredded chicken and crockpot shredded chicken both make a full batch you can use all week.
Can I double this recipe?
Yes. Double everything and bake it in an 8×8 dish for 20–25 minutes. For a big party, though, a full-size recipe is the better fit.
What should I serve with buffalo chicken dip?
Tortilla chips, crackers, celery and carrot sticks are the classics. For a game-day spread, it pairs well with a side of easy coleslaw.
Can I make buffalo chicken dip in the air fryer?
Yes, if your dish fits. Air fry at 350°F for 8–10 minutes, until hot and bubbly at the edges.
