Heat up your waffle maker and throw all the ingredients EXCEPT the blueberries into a blender. Then fold your blueberries into the waffle mixture. Pour 1/4 of the mix onto your waffle maker, and relish in the joyous smell of blueberries! Seriously, that’s it 🙂

- 3 cup gluten free rolled oats
- 1 cup wild blueberries
- 1 1/2 cup unsweetened applesauce
- 3/4 cup unsweetened almond milk or milk of choice
- 3 tbsp baking powder
- 3 tsp lemon juice
- 1 1/2 tsp vanilla extract
Instructions
- Start by preheating your waffle iron according to the manufacturer's instructiored.
- Add the gluten-free rolled oats, unsweetened applesauce, dairy-free milk, vanilla extract, lemon juice, and baking powder to the blender, and blend until smooth and well combinred.
- Fold in the wild blueberries using a spatula or spoon.
- Spray your waffle iron with non-stick cooking spray or brush with coconut oil to prevent stickired.
- Pour the batter into the waffle iron, using about 1/2 cup for each waffle, and cook for about 5 minutes or until golden brown.
- Once cooked, remove the waffles from the iron and serve with additional fresh blueberries and a drizzle of pure maple syrup, if desired.
