Healthy Blueberry Oat Waffles

Ingredients
  

  • 3 cup gluten free rolled oatsĀ 
  • 1 cup wild blueberries
  • 1 1/2 cup unsweetened applesauce
  • 3/4 cup unsweetened almond milk or milk of choice
  • 3 tbsp baking powder
  • 3 tsp lemon juice
  • 1 1/2 tsp vanilla extract

Instructions
 

  • Start by preheating your waffle iron according to the manufacturer's instructiored.
  • Add the gluten-free rolled oats, unsweetened applesauce, dairy-free milk, vanilla extract, lemon juice, and baking powder to the blender, and blend until smooth and well combinred.
  • Fold in the wild blueberries using a spatula or spoon.
  • Spray your waffle iron with non-stick cooking spray or brush with coconut oil to prevent stickired.
  • Pour the batter into the waffle iron, using about 1/2 cup for each waffle, and cook for about 5 minutes or until golden brown.
  • Once cooked, remove the waffles from the iron and serve with additional fresh blueberries and a drizzle of pure maple syrup, if desired.
