If you want something yummy but quick to make and nutritious, this cold veggie pizza is it!
This recipe is an incredibly easy way to incorporate more vegetables into your diet. Bonus, it also tastes really good.
The best part is that you can choose to top your pizza with whatever vegetables you enjoy the most or simply have on hand.
This recipe is enough for two to share or for my single peeps, enough for leftovers—double the ingredients for a delicious appetizer to share before a meal or with friends.
It’s made with only a few ingredients, including a crescent dough crust, a ranch-flavored cream cheese sauce, and lots of fresh vegetables.
Who knew all it took was the ranch and cream cheese combo to be the gateway to improving our health!?

This cold veggie pizza recipe only calls for a few ingredients plus all the veggies your heart desires:
Crescent dough crust – I like using dough because it comes in one sheet, but crescent rolls work too; you’ll just have to pinch together the seams. I use Annie’s Organic for a healthier dough.
Veggie pizza “sauce” – By combining softened cream cheese and Primal Kitchen Avocado Mayo with Primal Palate Garden Ranch Seasoning Mix or any ranch dressing seasoning packet, you create the most delicious, creamy base that’s loaded with flavor and helps the veggies stick to the pizza.
Veggie toppings – For the recipe pictured, I used a mixture of broccoli, cauliflower, and red and green bell peppers (and I totally forgot to add my shredded carrots and cheddar cheese! It was so good I didn’t notice). I love the taste combination and pops of beautiful colors!
Optional – For those who can’t call a pizza, pizza without the cheese, I prefer topping mine with sharp cheddar shredded cheese. Opt for a block of sharp cheddar and shred yourself for a less processed option.
How to Make this Veggie Pizza Recipe
Start with your crust. Once you preheat your oven, lay out crescent rolls or dough on a baking sheet and pinch seams together if needed. Bake according to package instructions until lightly browned.
While waiting, cut your desired vegetables into bite-sized pieces.
Mix the cream cheese, mayonnaise, and dry ranch dressing seasoning in a medium bowl until smooth.
When your dough is done baking, allow it to cool completely. Once cooled, spread a thick layer of the sauce evenly over the crust.
Sprinkle on the cut veggies and lightly press to set into the sauce. Finish the veggie pizza with shredded carrots or cheese if desired.
I prefer my cold veggie pizza, well, cold! So, I cover and refrigerate. Then cut the pizza into an appetizer or snack-sized squares to serve.
Tips for Making Veggie Pizza
This recipe is so easy to make it’s tough to go wrong!
While you can beat the ranch and cream cheese sauce with an electric mixer, one day, I couldn’t find one, so I opted for a fork and some arm muscle. You’re good to go as long as the cream cheese softens and there are no clumps of dry ranch in the mix.
Make sure you allow enough time for the crust to cool completely before adding the spread to ensure a crispier outcome. Remember the crust will continue cooking on the sheet once it’s pulled from the oven. Lightly browned or golden is your cue to take it out.
Consider the combination of vegetables before piling them on. Sure, you can throw anything on the pizza, but some vegetables just pair better together. My favorite combination is broccoli, bell pepper, and shredded carrots. Cauliflower, radishes, green onions, red onions, sliced olives, or cucumbers would also be great to add.
And lastly, avoid frozen veggies. Fresh veggies give a nice crunch with each bite.
Is this Veggie Pizza Recipe Healthy?
While I wouldn’t necessarily call cold veggie pizza a healthy food, it is a much better alternative for someone who might be eating, for example, meals out or snacks like potato chips.
This recipe uses a can of processed crescent dough, cream cheese, mayonnaise, and a packaged ranch seasoning mix, which I wouldn’t recommend consuming daily.
However, many of us do struggle to eat vegetables, and some eat none at all. So if this is what it takes to start eating more vegetables, this is an excellent choice when you’re on the path to a healthier lifestyle, which I will always support!
Ultimately, veggie pizza is a great treat that incorporates nutritious vegetables.
