Easy Steak Salad with Avocado, Corn & Honey Lime Dressing
A good steak salad should feel like dinner—not like you made a salad and reluctantly added a few pieces of beef on top.
This easy steak salad combines tender sliced steak with sweet corn, creamy avocado, crisp cucumber, juicy tomatoes and feta, all tossed with a simple honey lime dressing. It has plenty of fresh produce, enough protein to make it satisfying and, most importantly, it doesn’t require a huge amount of prep.
And if cooking steak from scratch on a weeknight is the exact reason you wouldn’t make this recipe? Don’t.
One of my favorite shortcuts for meals like this is pre-cooked sous vide steak. I found Cuisine Solutions Sliced Grass-Fed Beef Sirloin at Costco already cooked, seasoned and sliced. Warm it for a few minutes while you chop the vegetables, and this becomes a legitimately easy 15-minute lunch or dinner.
That’s exactly the kind of shortcut I’m looking for: not eliminating fresh food, but removing the part that makes me decide not to make it in the first place.

Why You’ll Love This Easy Steak Salad
This is the kind of healthy meal that works particularly well during a busy week because it doesn’t require a bunch of separate recipes or Sunday meal prep.
You’ll love it because it’s:
- Fast. With pre-cooked steak, most of your prep is chopping vegetables.
- Filling. Steak and avocado give this considerably more staying power than a basic green salad.
- Packed with fresh ingredients. Cucumber, tomato, corn, avocado, onion and cilantro bring plenty of color, texture and flavor.
- Easy to customize. Change the cheese, vegetables or dressing based on what you already have.
- Good for lunch or dinner. It’s substantial enough to be the meal instead of just a side dish.
- Meal-prep friendly. Prepare the components ahead and assemble when you’re ready to eat.
- Not dependent on lettuce. You can add arugula or greens if you want them, but you absolutely don’t need a bag of lettuce to make this work.

Steak Salad Ingredients
You don’t need anything particularly unusual for this recipe.
Steak
Use about 12 ounces of cooked, thinly sliced steak.
Sirloin is my easy option here, especially if you’re using pre-cooked steak from Costco, but flank steak, skirt steak or leftover grilled steak all work.
Corn
Fresh, frozen or even leftover grilled corn works.
If you have a few extra minutes, quickly charring the corn in a skillet adds another layer of flavor. If you don’t, thaw it and move on. The salad will still be good.
Cucumber
Cucumber gives the salad the crisp, fresh texture you would normally rely on lettuce to provide.
English or Persian cucumbers are especially easy because their skins are thin and you don’t need to peel them.

Tomatoes
Use cherry or grape tomatoes and slice them in half.
During tomato season, chopped garden tomatoes are even better.
Avocado
Avocado adds creaminess and makes the salad more satisfying without needing a heavy dressing.
Add it right before serving so it stays fresh.
Red Onion
Thinly sliced red onion adds just enough sharpness to balance the steak and avocado.
If raw onion is too aggressive for you, soak the slices in cold water for about 10 minutes and drain them before adding them to the salad.
Feta
I like feta here because it’s salty and tangy without overpowering the honey lime dressing.
Blue cheese is also an excellent option if you prefer a more traditional steakhouse-style steak salad.
Cilantro
Fresh cilantro works naturally with the corn, avocado and lime dressing.
If you don’t like cilantro, just leave it out.
Jalapeño
Jalapeño is completely optional.
Add it if you want a little heat, or skip it and keep this a simple honey lime steak salad.

The Easy Costco Steak Shortcut
You can absolutely cook steak specifically for this salad.
You can also not do that.
Cuisine Solutions Sliced Grass-Fed Beef Sirloin is sold fully cooked and already sliced, which takes care of the most time-consuming part of making a steak salad.
I like the idea of shortcuts like this because they solve an actual problem. Buying pre-cooked steak isn’t replacing the vegetables, avocado or homemade dressing with highly processed substitutes. It’s simply removing a cooking step on a night when that cooking step might be the difference between making dinner and ordering it.
Warm the steak briefly in a skillet before adding it to the salad, or serve it cold if you’re packing the salad for lunch.
Can’t find the Costco steak?
Use:
- Leftover grilled steak
- Sirloin
- Flank steak
- Skirt steak
- New York strip
You can also intentionally cook an extra steak at dinner and save half for lunch the next day.
That is my kind of meal prep: make slightly more of something you’re already cooking instead of spending your entire Sunday preparing food for Wednesday.
How to Make Steak Salad
1. Make the honey lime dressing
Add olive oil, fresh lime juice, honey, Dijon mustard, minced garlic, salt and pepper to a small jar.
For a spicy version, add finely minced jalapeño.
Put the lid on and shake until the dressing is well combined.
2. Prep the vegetables
Chop the cucumber and avocado, halve the tomatoes, thinly slice the red onion and chop the cilantro.
Thaw frozen corn if necessary.
If you want charred corn, add it to a hot skillet for a few minutes until lightly browned.
3. Warm the steak
If you’re using pre-cooked sirloin, warm the sliced steak briefly in a skillet.
You don’t need to cook it all over again. You’re just warming it through.
Leftover steak can also be served cold if you prefer.
4. Assemble the salad
Add the cucumber, tomatoes, corn, avocado, red onion and cilantro to a large serving bowl.
If you want greens, add a few handfuls of arugula.
Top everything with the sliced steak and crumbled feta.
Drizzle with honey lime dressing and gently toss, or serve the dressing on the side.
What to Put in a Steak Salad
There really isn’t one correct way to build a steak salad.
Instead of memorizing a specific ingredient list, think about balancing a few different elements.
You want something fresh and crunchy, like cucumbers, tomatoes, peppers or corn.
Add something creamy, such as avocado, feta, goat cheese or blue cheese.
Include something sharp or acidic, such as red onion, pickled onions, jalapeño or a bright vinaigrette.
Then add the steak.
Leafy greens are optional.
Arugula works particularly well if you want greens because its slightly peppery flavor can hold its own against steak. But if you’re avoiding bagged greens—or simply don’t have any—the cucumber, tomatoes, corn and avocado make a perfectly good chopped salad base on their own.
What Dressing Goes With Steak Salad?
Steak is rich, so I prefer a dressing with enough acidity to balance it.
The honey lime dressing in this recipe works because fresh lime keeps the whole salad bright, a little honey rounds out the acidity and Dijon helps bring everything together.
Other dressings that pair well with steak salad include:
- Balsamic vinaigrette
- Dijon vinaigrette
- Chimichurri
- Cilantro lime dressing
- Blue cheese dressing
- Creamy avocado dressing
For this particular combination of corn, avocado, tomato and cucumber, I’d stick with something citrusy and relatively light.
Easy Steak Salad Variations
Steak Salad With Blue Cheese
There’s a reason steak and blue cheese are a classic combination.
Swap the feta for crumbled blue cheese. You can keep the honey lime dressing or change it to a simple balsamic or Dijon vinaigrette for more of a steakhouse-style salad.
Spicy Steak Salad
Add sliced jalapeño to the salad and minced jalapeño to the dressing.
You can also leave some of the seeds in if you want more heat.
Steak Salad Without Lettuce
The recipe already works without lettuce.
Skip the optional arugula and use the cucumber, corn, tomatoes and avocado as the base. Add a little extra cucumber or tomato if you want more volume.

Add a Grain
Add cooked quinoa to make the salad even more substantial.

Make It Even Easier
Use pre-cooked steak, frozen corn and pre-crumbled feta.
Buying a few ingredients already prepped is completely reasonable if it makes the difference between actually making the meal and not making it at all.
Can You Meal Prep Steak Salad?
Yes, but store the components separately rather than tossing everything together several days ahead.
Prep the steak, corn, cucumber, tomatoes and red onion and refrigerate them in airtight containers.
Make the honey lime dressing separately and keep it in a small jar.
Wait to cut the avocado until you’re ready to eat, and keep any greens separate so they stay fresh.
Then you can assemble lunch in a few minutes instead of starting from zero.

Is Steak Salad Healthy?
Steak salad can absolutely fit into a balanced way of eating.
The steak provides protein along with nutrients including iron and vitamin B12. The vegetables add fiber, vitamins and minerals, while avocado and olive oil provide satisfying fats.
But I don’t think every meal needs to pass some imaginary test before we’re allowed to call it healthy.
The bigger benefit of a meal like this is that you’re combining protein, produce, fat and flavor in a way that actually leaves you satisfied.
A theoretically “perfect” lunch that takes an hour to prepare isn’t very useful when you don’t have an hour.
A 15-minute steak salad that you will actually make? Much more useful.
What to Serve With Steak Salad
This salad can easily stand alone for lunch or a lighter dinner.
If you want something alongside it, try:
- Quinoa
- Roasted baby potatoes
- Corn on the cob
- Crusty bread
- Fresh fruit
- Grilled vegetables
For a summer dinner, you could also make a batch of Asian Cucumber Salad and serve both alongside grilled food.

For the Steak Salad

Instructions
- Add the olive oil, lime juice, honey, Dijon mustard, garlic, salt, pepper and optional minced jalapeño to a small jar. Cover and shake until combined.
- Chop the cucumber and avocado, halve the tomatoes, thinly slice the red onion and chop the cilantro.
- If desired, add the corn to a hot skillet and cook for 3 to 5 minutes, stirring occasionally, until lightly charred.
- Warm the cooked steak briefly in a skillet, if desired. If using fully cooked sous vide steak, heat only until warmed through.
- Add the cucumber, tomatoes, corn, avocado, red onion, cilantro and optional arugula to a large bowl.
- Top with sliced steak, feta and optional jalapeño.
- Drizzle with honey lime dressing and toss gently. Serve immediately.

You could buy a raw steak, make a marinade, grill it, let it rest and carefully slice it across the grain.
Sometimes that sounds great. Sometimes it’s 6:15 on a Wednesday.
Using already-cooked steak means you can chop a few vegetables, shake dressing in a jar and have a protein-packed dinner ready before you would have finished preparing the steak from scratch.
That’s the point.
Healthy eating gets considerably easier when we stop assuming everything has to be made from its most basic form to count.
Use the shortcut where it helps. Make the fresh parts where they matter. And get dinner on the table.
