Ingredients
  

  • 1 ripe avocado, peeled and mashed
  • 1 egg
  • 1/2 cup coconut sugar or maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsweetened almond milk or oat milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large mixing bowl, mash the avocado until smooth.
  • Add in the coconut sugar or maple syrup, cocoa powder, baking powder, baking soda, and salt. Mix until well combined.
  • Beat in the egg and vanilla extract, then gradually add in the almond or oat milk while mixing.
  • Fill the cupcake liners 2/3 of the way full with the batter.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool completely before serving. Top with your favorite frosting and enjoy!
