This watermelon feta salad with basil is fresh, easy, and perfect for summer lunches, cookouts, or entertaining. Made with juicy watermelon, salty feta, fresh herbs, cucumber, and a simple lime dressing, it tastes sophisticated without being complicated.

Ingredients

  • 6 cups cubed seedless watermelon, chilled
  • 1 cup cucumber, sliced or diced
  • 3/4 cup crumbled feta cheese
  • 1/4 cup fresh basil, thinly sliced or torn
  • 2 tablespoons thinly sliced red onion or shallot, optional
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice, plus more to taste
  • 1 teaspoon honey, optional
  • 1/4 teaspoon flaky salt, plus more to taste
  • Freshly cracked black pepper, to taste
  • 2 cups arugula, optional
  • Balsamic glaze, optional for serving

Instructions

  • Add the cubed watermelon, cucumber, feta, and red onion or shallot to a large serving bowl.
  • In a small bowl, whisk together the olive oil, lime juice, honey, flaky salt, and black pepper.
  • Pour the dressing over the watermelon mixture and gently toss to combine.
  • Add the fresh basil and toss again lightly.
  • If using arugula, fold it in right before serving.
  • Taste and adjust with more lime juice, salt, pepper, or feta as needed.
  • Drizzle with balsamic glaze before serving, if desired.
  • Serve immediately.

Notes

  • For the best texture, assemble this salad close to serving. Watermelon releases liquid as it sits, so it is better to prep the ingredients ahead and toss everything together at the end.
  • If using arugula, add it right before serving so it stays fresh.
  • Mint can be used instead of basil for a more classic version, but basil gives the salad a slightly more savory, elevated flavor.
