Soft, naturally sweetened sweet potato bars made with oat flour, maple syrup, and chocolate chips. These healthy sweet potato bars are easy to make, perfectly spiced, and ideal for snacks, breakfast, or meal prep.

Ingredients

  • 1 cup mashed roasted sweet potato (about 1 medium)
  • 1/4 cup maple syrup
  • 2 tbsp melted butter or coconut oil
  • 1/4 cup milk of choice
  • 1 tsp vanilla extract
  • 1 large egg
  • 3/4 cup oat flour
  • 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. In a large bowl, whisk together mashed sweet potato, maple syrup, melted butter, milk, vanilla extract, and egg until smooth.
  3. Add oat flour, almond flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Stir until just combined.
  4. Fold in chocolate chips and optional nuts.
  5. Spread batter evenly into the prepared pan and smooth the top. Add extra chocolate chips if desired.
  6. Bake for 22–28 minutes, until the center is set and a toothpick comes out mostly clean.
  7. Let cool for at least 20 minutes before slicing into bars.

Notes

  • Roast sweet potato for best flavor and texture (vs. microwaving).
  • Do not overmix the batter to keep bars soft.
  • Bars will firm up as they cool.
  • Store in the fridge for up to 5 days or freeze for up to 2 months.
