Easy Honey Lime Dressing

This easy honey lime dressing comes together in one jar in about two minutes. Fresh lime, a little honey and Dijon make it bright, balanced and endlessly useful.

Ingredients

  • 1/4 cup extra-virgin olive oil
  • Juice of 2 limes (about 1/4 cup)
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 1/2 jalapeño, finely minced, optional

Instructions

  • Add the olive oil, lime juice, honey, Dijon mustard, garlic, salt, pepper and optional minced jalapeño to a small jar.
  • Cover and shake for 20 to 30 seconds, until creamy and combined.
  • Taste and adjust: more honey to sweeten, more lime to sharpen, more salt if it tastes flat.
  • Use immediately, or store in the fridge for up to 1 week. Shake again before using.

Notes

  • For fruit salad: Skip the Dijon, garlic and pepper. Use honey, lime juice, a little lime zest and a pinch of salt. Add mint or poppy seeds if you like.
  • Spicy version: Add finely minced jalapeño or a pinch of red pepper flakes.
  • No honey: Substitute maple syrup or agave in the same amount.
  • Creamy version: Whisk in a spoonful of Greek yogurt or mayo.
  • Scaling: This makes enough for one large salad. Double or triple and keep a jar in the fridge for the week.
  • Storage: The dressing firms up and separates when cold. Let it sit a few minutes, then shake.
