This curried cauliflower recipe is a quick and easy one-pan stovetop meal made with simple ingredients, warm spices, and tender cauliflower. Ready in under 20 minutes, it’s a flavorful way to eat more vegetables without overthinking it.

Ingredients

  • 1 medium head cauliflower, cut into small bite-sized florets
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • 2–3 cloves garlic, minced
  • 2 green onions, chopped
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Juice of ½ lemon
  • Fresh parsley or cilantro, for garnish (optional)

Instructions

  • Heat oil in skillet, cook cauliflower 7–8 minutes until fork-tender
  • Add garlic and green onions, cook 1–2 minutes
  • Add spices and toss
  • Add peas, cook 3–4 minutes
  • Finish with lemon juice
  • Serve

Notes

  • Don’t overcrowd the pan
  • Add water + cover if cauliflower isn’t soft
  • Lemon juice at the end improves flavor
