An easy canned yams recipe made with three ingredients — canned yams in syrup, brown sugar, and butter — baked until thick and glazed. No marshmallows, no peeling.

Ingredients

  • 2 large cans (29 oz each) yams in syrup
  • 1/2 to 1 cup brown sugar
  • 3 tablespoons unsalted butter

Instructions

  1. Preheat oven to 375°F. Place a sheet pan on the rack below your baking rack.
  2. Drain yams and reserve all the syrup in a bowl.
  3. Arrange yams in a 9×13-inch baking dish.
  4. Mix about half the reserved syrup (1–1.5 cups) with 1/2 cup brown sugar until dissolved and slightly thickened.
  5. Pour glaze over yams so it comes about halfway up.
  6. Cut butter into 6–8 small pieces and dot evenly across the top.
  7. Cover loosely with foil and place on the middle rack, sheet pan below.
  8. Bake 1 hour.
  9. Check thickness. If still watery, stir in 1/4–1/2 cup more brown sugar, re-cover, and bake 20–30 more minutes.
  10. Optional: remove foil for the last 20–30 minutes for deeper caramelization.
  11. Rest 5 minutes before serving.

Notes

  • Use canned yams packed in SYRUP, not water
  • Always use a sheet pan underneath to catch drips
  • Add more brown sugar if the glaze isn’t thickening
  • Make ahead: bake a day early, refrigerate, reheat covered at 350°F for 20–30 minutes
