This avocado cottage cheese toast is a quick, creamy, high-protein breakfast made with avocado, cottage cheese, lemon, and everything bagel seasoning on toasted sourdough. The avocado and cottage cheese are mixed together first for a smooth pale green spread that makes this easy toast feel café-worthy.

Ingredients

  • 1 large slice sourdough bread
  • 1/2 ripe avocado
  • 1/3 cup cottage cheese
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon lemon zest, plus more for topping
  • Pinch of salt
  • Black pepper, to taste
  • 1/2 to 1 teaspoon everything bagel seasoning
  • Optional: chives, microgreens, chia seeds, red pepper flakes, sliced tomato, balsamic glaze, or a jammy egg

Instructions

  • Toast the sourdough until golden and crisp.
  • In a small bowl, mash the avocado, cottage cheese, lemon juice, lemon zest, salt, and black pepper together until creamy.
  • For a smoother whipped texture, blend the avocado cottage cheese mixture in a small food processor or blender until pale green and creamy.
  • Spread the avocado cottage cheese mixture over the toasted sourdough.
  • Top with everything bagel seasoning, extra lemon zest, and more black pepper.
  • Add optional toppings like chives, microgreens, sliced tomato, red pepper flakes, or a jammy egg.
  • Serve immediately.
