This recipe for Thin Mints uses chocolate graham crackers dipped in mint chocolate for an easy homemade copycat version of the classic cookie.

Ingredients

  • 1 package chocolate graham crackers
  • 1 package almond bark
  • 10 oz Andes mints
  • 1 bag semi-sweet chocolate chips
  • ½ teaspoon peppermint extract

Instructions

  1. Melt almond bark, Andes mints, and chocolate chips together in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth.
  2. Stir in peppermint extract and a pinch of salt.
  3. Dip chocolate graham crackers into the melted chocolate mixture until fully coated.
  4. Place coated crackers on parchment paper.
  5. Allow cookies to set at room temperature or refrigerate until firm.
  6. For best flavor, store cookies in the freezer before serving.
