Indulge in this delicious dairy-free chocolate avocado cupcake recipe. Easy to make and bursting with chocolaty goodness!

Ingredients

  • 1 ripe avocado, peeled and mashed
  • 1 egg
  • 1/2 cup coconut sugar or maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsweetened almond milk or oat milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large mixing bowl, mash the avocado until smooth.
  3. Add in the coconut sugar or maple syrup, cocoa powder, baking powder, baking soda, and salt. Mix until well combined.
  4. Beat in the egg and vanilla extract, then gradually add in the almond or oat milk while mixing.
  5. Fill the cupcake liners 2/3 of the way full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool completely before serving. Top with your favorite frosting and enjoy!
